Belgian waffles

Yield
4 servings

A Belgian waffle is thick and crisp outside, light and almost custardy inside, with deep pockets that hold butter and syrup. The lift comes from egg whites whipped on their own and folded in, so this is the recipe that teaches you to whip and fold, two skills you'll use again in cakes, soufflés and mousse.

Batching

Make one base batch at a time, with its own whipped whites, and fold the whites in just before cooking. Larger yields use separate batches; the cooking time for each waffle does not change with quantity.

Original recipe: 4 servings.

The base nutrition scenario covers plain waffles. Toppings, extra milk used to loosen the batter, extra salt added after tasting, and the optional oil for the grids are excluded; if you use the oil, the amount the waffles absorb is not established.

Before you start

  • Read through the recipe before heating the oven and the iron. Gather the bowls, mixer, utensils and measured ingredients, and keep the eggs cold until you separate them.

Directions

Read and gather. Everything is measured and within reach.
1

Read and gather

For the whole recipe

Read through the recipe, gather the equipment, and use the ingredient lines to measure and prepare everything. Keep the eggs in the refrigerator until you separate them. Everything is measured and within reach.

Heat the oven and the iron. Heat the waffle iron on its medium-high setting until its ready light comes on, about 10 minutes.
2

Heat the oven and the iron

For each batter batch

Heat the oven to 200°F (95°C) with a rack in the middle position, and set the wire rack on the rimmed baking sheet on that oven rack for holding the waffles. Heat the waffle iron on its medium-high setting until its ready light comes on, about 10 minutes.

Melt the butter. Melt the butter in the small saucepan over low heat, then take the pan off the heat and let the butter cool until it is liquid and just warm to the touch.
3

Melt the butter

For each batter batch

Melt the butter in the small saucepan over low heat, then take the pan off the heat and let the butter cool until it is liquid and just warm to the touch.

Separate the eggs. Separate the cold eggs one at a time over the small cup, sliding each white into the large, very clean bowl and each yolk into a medium bowl, until no trace of yolk is in the whites.
4

Separate the eggs

For each batter batch

Separate the cold eggs one at a time over the small cup, sliding each white into the large, very clean bowl and each yolk into a medium bowl, until no trace of yolk is in the whites.

Whisk the base batter. If the batter is too stiff to stir, loosen it with extra whole milk to taste, no more than 2 tbsp for this batch.
5

Whisk the base batter

For each batter batch

Whisk the flour, 2 tbsp granulated sugar, the baking powder and 1/2 tsp fine salt in the third bowl. Whisk the milk and vanilla into the yolks, then whisk in the melted butter in a thin stream. Stir the wet mixture into the dry with the spatula just until combined, stopping while a few small lumps remain. If the batter is too stiff to stir, loosen it with extra whole milk to taste, no more than 2 tbsp for this batch.

Beat the egg whites. Add 1 tbsp granulated sugar and beat on medium-high speed until glossy peaks hold when you lift the beaters, with only the very top of each peak curling over.
6

Beat the egg whites

For each batter batch

Beat the egg whites with clean beaters on medium speed until foamy and opaque. Add 1 tbsp granulated sugar and beat on medium-high speed until glossy peaks hold when you lift the beaters, with only the very top of each peak curling over.

Stir in a third of the whites and fold. Stop when only a few thin white streaks remain.
7

Stir in a third of the whites and fold

For each batter batch

Stir about a third of the whipped whites into the batter to lighten it. Fold in the other two-thirds with the spatula: cut down through the center, sweep along the bottom and up the side, turn the spatula over and give the bowl a quarter turn. Stop when only a few thin white streaks remain.

Cook a test waffle. If it tastes flat, fold fine salt to taste into the batter in the bowl with two strokes.
8

Cook a test waffle

For each batter batch

Cook a test waffle with the iron on its medium-high setting. If your iron tends to stick, brush the hot grids lightly with a little of the canola oil first. Pour batter into the center to cover about two-thirds of the grid, close the lid, and cook until the steam slows to a thin wisp, about 4 to 5 minutes. Taste the cooked test waffle, never the raw batter. Aim for a crisp, deep golden outside, an airy inside and a buttery, lightly sweet, well-salted flavor. If it tastes flat, fold fine salt to taste into the batter in the bowl with two strokes.

Cook the other waffles and hold them. Move each finished waffle to the wire rack in the 200°F oven in a single layer so it stays crisp.
9

Cook the other waffles and hold them

For each batter batch

Cook the other waffles the same way with the iron on its medium-high setting, pouring each one after the ready light comes back on and cooking until its steam slows to a thin wisp. Give the batter one fold from the bottom before each pour. Move each finished waffle to the wire rack in the 200°F oven in a single layer so it stays crisp.

Divide and serve. Serve while the waffles are still crisp.
10

Divide and serve

For the whole recipe

Divide the waffles into 4 servings on warm plates, giving everyone one whole waffle and cutting any extra waffles into quarters to share. Add sliced strawberries, softly whipped cream, powdered sugar or warm maple syrup to taste, if using, at the table. Serve while the waffles are still crisp.

Why it works

Associated with

Belgian (Brussels waffle), American

Waffles descend from medieval wafers baked between iron plates; the Brussels waffle recipe was formalized by Florian Dacher in 1842/43. Belgian-style waffles were shown at Expo 58 in Brussels, introduced to the US at the 1962 Century 21 Exposition and popularized at the 1964 New York World's Fair by Maurice Vermersch as the 'Bel-Gem' waffle, served with whipped cream and strawberries.

Skill level

Some practice

Separating, whipping and folding are the skills the recipe says it teaches; more practice than plain pancakes.

You'll practice: separating eggs, whipping egg whites to glossy peaks, folding whites into batter, judging a waffle by steam, holding in a low oven, whipping cream to soft peaks

Serving and keeping

Make ahead: cook, cool on a rack, freeze in a single layer, then bag

Leftovers: toaster or 350°F oven until crisp and hot (165°F)

Food safety

  • steam slows to a thin wisp and the waffle is deep golden (step 5)
  • raw egg yolks, whites and flour; do not taste raw batter
  • rinse strawberries under running water before hulling
  • iron surfaces are very hot; brush oil only on the hot grid with a pastry brush
