Granola

Yield
12 servings

Homemade granola lets you decide the sweetness, the salt and the size of the clusters. The secret to big, crunchy clumps is simple: press the mix flat, bake it low, and leave it alone while it cools.

Batching

Bake each batch on its own lined half-sheet pan so the layer stays thin; baking time does not change with the number of batches.

Original recipe: 12 servings.

Coconut flakes are optional and excluded from the base nutrition scenario, as are extra fine sea salt and maple syrup added at the tasting step.

Before you start

  • Read through the recipe before heating the oven. Line the pan and measure everything so the coated oats go straight onto the pan.

Directions

Bowls of oats, nuts, seeds, coconut and cherries sit beside a parchment-lined baking sheet.
1

Read and gather

For the whole recipe

Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything, and line the 18-inch by 13-inch sheet pan with parchment paper. Everything is measured and the pan is lined.

An empty open oven shows a middle rack and a small oven thermometer.
2

Heat the oven

For each batch

Heat the oven to 300°F with a rack in the middle. The oven is on and heating.

A whisk rests in glossy amber maple coating inside a glass mixing bowl.
3

Whisk the coating

For each batch

Whisk about 1/2 cup pure maple syrup, the olive oil, brown sugar, 3/4 tsp fine sea salt, vanilla and cinnamon in the large bowl until the sugar dissolves and the coating looks glossy and even, about 1 minute.

A drop of amber coating hangs from a whisk above the bowl beside salt and syrup.
4

Taste the coating

For each batch

Taste a drop from the whisk. Aim for sweet maple, warm cinnamon and vanilla, and a clear salty edge, stronger than you want the finished granola. If it tastes flat, add fine sea salt to taste; for more sweetness, add pure maple syrup to taste, no more than 2 tbsp more for this batch. The coating tastes sweet, warm and clearly salted.

A spatula folds shiny coated oats, pecans, pumpkin seeds and coconut in a glass bowl.
5

Add and fold the oats

For each batch

Add the oats, pecans, pumpkin seeds and coconut flakes, if using. Fold with the spatula, scooping up from the bottom, until every oat is shiny and no dry patches are left at the bottom of the bowl.

A flat-bottom measuring cup presses coated granola into an even layer on a lined tray.
6

Spread and press flat

For each batch

Spread the mixture over the lined pan in an even layer, edge to edge, and press it down firmly with the spatula or the bottom of the measuring cup. Push any thin edges in toward the center. The layer is compact and even all over.

A deep golden granola layer remains unbroken on a parchment-lined baking sheet.
7

Bake low and turn the pan

For each batch

Bake on the rack in the middle at 300°F until deep golden brown, dry-looking and toasty-smelling, about 40 to 45 minutes, turning the pan front to back about halfway through without stirring. It still feels a little soft while hot.

An intact golden granola layer cools in its baking sheet on a wire rack.
8

Set the pan on the rack to cool

For each batch

Set the pan on the wire rack and leave the granola whole, without stirring or breaking it, until completely cool and hard to the touch, about 45 minutes.

Golden granola clusters mixed with dried cherries fill a bowl beside broken pieces on parchment.
9

Lift and break into clusters

For each batch

Lift the granola out by the parchment and break it into clusters of the size you want. Toss with the dried cherries. The granola is in clusters, with the cherries spread through.

Granola with dried cherries fills a clear storage jar beside a portioning scoop.
10

Divide and store

For the whole recipe

Divide into 12 servings of 1/2 cup each, with milk or yogurt, or store it airtight at room temperature, where it keeps its crunch for about 2 weeks. The granola is portioned or sealed airtight.

Why it works

Associated with

American

James Caleb Jackson created 'granula' at his Dansville, New York sanitarium in 1863; John Harvey Kellogg's similar cereal was renamed 'granola' to avoid conflict. Fruit-and-nut granola revived in the 1960s counterculture, and large brands followed from 1972. Unlike muesli, granola is sweetened and baked with oil.
