Stovetop Oatmeal
- Yield
- 4 servings
A pot of oatmeal is a few minutes of easy stirring, and it teaches three moves you'll use far beyond breakfast: toasting a grain in fat, cooking starch to a creamy set, and salting the liquid early. Made this way, it tastes like toasted oats and warm milk, not paste.

Batches and reset
4 servings · US measures · 1 batch
Batching
Use a separate saucepan for each base batch. Cook and stir each batch to the same texture cues; cooking time does not multiply with ingredient quantities.
Original recipe: 4 servings.
The base nutrition uses banana, walnuts and brown sugar. Optional cinnamon, cold serving milk and extra to-taste milk or salt adjustments are excluded.
Before you start
- Gather the measured ingredients and equipment before heating the saucepan.
Directions

Read and gather
For the whole recipe
Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything. The ingredients and tools are ready before heating.

Toast the walnuts
For each mixing batch
Toast the walnuts in the dry 3-quart saucepan over medium-low heat. Shake the pan until the nuts smell toasty and darken a shade. Transfer to a plate, let cool, then chop. The walnuts smell toasty and have darkened a shade.

Melt butter and toast oats
For each mixing batch
Melt the butter in the saucepan over medium heat until foamy. Add the oats and stir constantly until they smell nutty and a few flakes turn light golden at the edges. The oats smell nutty and have light golden edges.

Pour in the liquids
For each mixing batch
Pour in the water and about 2 cups whole milk, standing back as the pan steams. Add 1/2 tsp kosher salt and the cinnamon, if using. Stir over medium-high heat, then medium-low once the edges bubble steadily. The edges bubble steadily before the heat is lowered.

Simmer gently
For each mixing batch
Simmer gently over medium-low heat with a few lazy bubbles at a time. Stir and scrape the bottom frequently until the oats are plump and a spoon trail across the bottom slowly fills back in. The oats are plump and the spoon trail slowly fills back in.

Take off the heat
For each mixing batch
Take the pan off the heat while the oatmeal is slightly looser than desired. Cover and let stand until it thickens to a soft, spoonable set. The oatmeal is soft and spoonable.

Taste and adjust
For each mixing batch
Taste the oatmeal before adding sugar. Aim for toasted grain and warm milk, with enough salt to bring out the oats. Add kosher salt to taste if it tastes flat, or whole milk to taste if it is too thick. The oatmeal is creamy with a toasted-oat flavor.

Divide and serve
For the whole recipe
Divide into 4 servings. Distribute the sliced banana, chopped toasted walnuts and brown sugar across the servings. Add cold whole milk to taste, if desired. The oatmeal is portioned with its toppings.
About this recipe
Research preview: these details come from our sourced research and haven't been reviewed by our chef yet.
Why it works
Toasting the oats in butter deepens their flavor, cooking them in half water and half milk makes them creamy without heaviness, and a short covered rest off the heat lets them set to a soft, spoonable texture.
Associated with
Scottish and Irish oat porridge traditions and North American breakfast oatmeal
Oats became Scotland's staple grain because they suit a cold, wet climate, and oat porridge and Irish stirabout were everyday food. Rolled (old-fashioned) oats are steamed and flattened whole groats.

Serving and keeping
Best served: After the short covered rest, once it sets to a soft, spoonable texture In bowls topped with sliced banana, toasted walnuts and brown sugar, with cold milk if you like
Make ahead: Cooked oatmeal sets firm in the fridge; loosen it with milk when reheating.
Storage: Refrigerate within 2 hours, covered. Keep fruit and nuts separate. A freezer time for cooked oatmeal was not found in the sources checked.
Leftovers: Leftovers set firm; stir in milk while reheating to bring back a creamy texture.
Food safety
- Stand back when pouring the liquid into the hot pan; it hisses and steams.
- Reheat leftovers until the center reads 165 °F (74 °C).
We make no statement about cross-contact in your kitchen or in packaged ingredients. Ordinary oats can carry wheat or barley; this selected recipe includes walnuts (tree nuts).
