The optional olive oil spray and any extra salt or pepper are left out of the base nutrition scenario. Nutrition is incomplete because Standard Reference has no Dijon mustard record.

Before you start

  • Read through the recipe before you start. Gather the air fryer, two small bowls, brushes, tongs, paper towels, instant-read thermometer and the measured ingredients.

Directions

Four raw chicken thighs rest on paper towels in a tray beside clean tongs.
1

Read and gather

For the whole recipe

Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything. Pat the chicken dry with paper towels instead of rinsing it, then wash your hands and anything the raw chicken touched. Everything is measured and the chicken is dry.

A spoon stirs smooth golden honey mustard sauce in a small white bowl.
2

Stir the honey-mustard sauce together

For each basketful

Stir 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/4 tsp salt and 1/4 tsp black pepper together in a small bowl, then stir in 2 tbsp honey and 2 tbsp Dijon mustard until the sauce is smooth with no dry streaks of spice.

Seasoned honey mustard sauce is divided equally between two white bowls beside a tasting spoon.
3

Taste the sauce and divide it

For each basketful

Taste the sauce now, before it touches the raw chicken. Aim for sweet and tangy with a gentle smoky warmth. If it tastes flat, stir in salt to taste and black pepper to taste. Spoon half of the sauce into the second small bowl to use after turning. The sauce is seasoned and divided between the two bowls.

4

Heat the air fryer

For each basketful

Heat the air fryer to 390°F, following the maker's preheating directions. The air fryer is fully heated.

Four raw chicken thighs lie separately in an air fryer basket with sauce brushed on top.
5

Mist the thighs and arrange them in the basket

For each basketful

Mist one side of each chicken thigh with olive oil spray, if using, and lay the thighs oiled side down in the basket in a single layer without overlapping. Brush the tops with the sauce from the first bowl. The thighs lie flat in one layer with sauce on top.

Four glazed chicken thighs begin browning at the edges in an air fryer basket.
6

Air-fry the first side

For each basketful

Air-fry at 390°F until the tops look glazed and begin to brown at the edges, about 8 minutes.

A thermometer checks a browned chicken thigh in the basket beside a brush and sauce bowl.
7

Turn the thighs and cook them to temperature

For each basketful

Turn the thighs with tongs and brush them with the sauce from the second bowl, using a clean brush. Keep air-frying at 390°F until an instant-read thermometer in the thickest part of every thigh reads 165°F (74°C), about 6 to 8 minutes.

Four browned glazed chicken thighs are divided among white plates beside serving tongs.
8

Divide and serve

For the whole recipe

Divide the chicken into 4 servings and serve warm. Refrigerate leftovers within two hours and reheat them to 165°F (74°C). The chicken is portioned and ready to serve.

About this recipe

Why it works

Drying the chicken lets the surface brown, and the air fryer's fast hot air crisps the edges while the thighs stay juicy. Glazing in two stages builds a sticky coating without burning the honey early.

Associated with

American home cooking

Honey mustard is a familiar American dip and dressing. The countertop air fryer, a small fan-forced convection oven, made quick crisp chicken thigh dishes like this common in recent years.

Serving and keeping

Best served: Right after cooking, once every thigh reaches a safe temperature Spoon any glaze from the basket over the thighs

Make ahead: Cook the chicken when you plan to eat it; the glaze softens on standing.

Storage: Refrigerate within 2 hours (1 hour above 90 °F / 32 °C), covered. Cooked chicken also freezes for about 3 to 4 months for best quality.

Leftovers: The glaze softens in the fridge; re-crisp briefly in the air fryer.

Food safety

  • Do not rinse raw chicken; pat it dry with paper towels and wash your hands afterward.
  • Keep the second half of the glaze in its own bowl and use a clean spoon or brush, so nothing that touched raw chicken goes into it; the glazed chicken then finishes cooking to 165 °F (74 °C).
  • Check the thickest part of every thigh with a food thermometer: 165 °F (74 °C).
  • Refrigerate leftovers within 2 hours and reheat to 165 °F (74 °C).

We make no statement about cross-contact in your kitchen or in packaged ingredients. Check the mustard and oil spray labels.

Nutrition notes

Most of the sodium comes from the salt and the Dijon mustard. Using half the salt, and choosing chicken that is not salt-injected, keeps it lower.

The honey glaze adds sugar; brushing on a thinner coat uses less.
