Batches and reset
3 servings · US measures · 1 batch
Batching
Heat one batch at a time in the 2-quart jug. For 6 servings, make a second batch. Heating times and the 160°F (71°C) endpoint do not change with the amount; a half batch is not offered because it would need half an egg.
Original recipe: 3 servings.
Extra sugar added to taste is left out of the base nutrition scenario.
Before you start
- Read through the recipe before you start. Gather the jug, microwave, whisk, small bowl, ladle, thermometer, mugs and the measured ingredients.
Directions
Read and gather
For the whole recipe
Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything. Everything is measured and the jug is ready.
Heat the milk and melt in the chocolate
For each jug
Heat 3 cups whole milk in the 2-quart microwave-safe jug on high power in the microwave until the milk is steaming, about 2 minutes. Whisk in about 1/3 cup semisweet chocolate mini chips, 1 tbsp sugar and 1/2 tsp ground cinnamon until the chocolate melts.
Whisk the egg and temper it
For each jug
Whisk the egg in the small bowl until smooth. Whisk a ladleful of the hot chocolate milk into the egg a little at a time, then whisk the warmed egg back into the jug until the egg is whisked smoothly into the chocolate milk.
Heat in short bursts to 160°F
For each jug
Heat on high power in the microwave in short bursts, whisking well after each and never letting it boil, until the drink is foamy and an instant-read thermometer reads 160°F (71°C), about 3 to 4 minutes in all.
Taste and adjust the sweetness
For each jug
Taste a small spoonful, carefully, since it is hot. Aim for chocolatey and lightly sweet, with warm cinnamon. If it is not sweet enough, whisk in sugar to taste. The drink tastes chocolatey and balanced.
Whisk and pour into mugs
For the whole recipe
Whisk until smooth and pour into mugs to make 3 servings. Serve right away; refrigerate any leftover within two hours and reheat it to 165°F (74°C), whisking. The drink is poured and ready.
About this recipe
Research preview: these details come from our sourced research and haven't been reviewed by our chef yet.
Why it works
Melting the chips into steaming milk keeps the drink smooth, and tempering the egg with a little hot chocolate milk before heating it to 160°F thickens the drink without scrambling the egg.
Associated with
Mexican spiced chocolate, with a European egg-thickened touch
Chocolate was drunk in Mesoamerica long before it reached Europe; Mexican drinking chocolate pairs it with cinnamon and sugar, and some European cups are thickened with egg.

Nutrition notes
Most of the sugar comes from the semisweet chocolate; the spoonful of sugar adds more. Leaving the sugar out makes it less sweet and more cocoa-forward.
The whole milk brings calcium.
