Frittata
- Yield
- 4 servings
A frittata is an open-faced omelet that sets slowly instead of being folded, so it forgives you in ways an omelet won't. It happily takes whatever vegetables and cheese are in the refrigerator, and it teaches two things every egg dish depends on: getting the water out of the filling, and setting eggs with gentle heat.

Batching
Make each batch in its own 10-inch oven-safe skillet; baking time does not change with the number of batches.
Original recipe: 4 servings.
Extra flaky kosher salt added at the tasting step is not included. Nutrition is incomplete because the measured flaky-salt mass is not established; spinach is mapped using a disclosed raw-spinach composition proxy.
Before you start
- Read through the recipe before heating the skillet. Slice, shred and measure everything and set it beside the stove.
Directions
Read and gather
For the whole recipe
Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything; once the eggs go in, things move fast. Everything is sliced, shredded and measured beside the stove.
Heat the oven
For each batch
Heat the oven to 350°F with a rack in the middle, so it is hot when the skillet goes in. The oven is on and heating.
Whisk the eggs
For each batch
Whisk the eggs, milk, 1 tsp flaky kosher salt and black pepper in the medium bowl until evenly yellow with no white streaks, stopping before it turns foamy. Stir in about 1 1/2 oz Gruyère and set the bowl aside.
Heat the oil and soften the vegetables
For each batch
Heat the olive oil in the 10-inch oven-safe skillet over medium heat until it shimmers. Add the onion, bell pepper and 1/4 tsp flaky kosher salt and cook, stirring now and then, until soft and golden at the edges, about 8 minutes.
Stir in the garlic
For each batch
Stir in the garlic over medium heat until you can smell it, about 30 seconds.
Add the spinach and cook off the water
For each batch
Add the spinach a handful at a time over medium heat, turning it until it collapses. Cook until no liquid pools when you push the vegetables aside and the pan looks glossy with oil, not wet.
Taste the filling
For each batch
Taste the vegetables. Aim for a little saltier than you would serve them on their own, since the eggs will soften the salt. If they taste flat, add flaky kosher salt to taste. The filling tastes well seasoned.
Spread the filling and set the edges
For each batch
Spread the vegetables evenly, turn the burner down to medium-low heat and pour in the egg mixture. Shake the pan gently to settle it and top with about 1 1/2 oz Gruyère. Cook without stirring until the edge sets in a band about 1 inch wide, about 3 to 5 minutes. Run the spatula once around the edge.
Bake until set
For each batch
Bake on the rack in the middle at 350°F until the edge puffs, the center shivers as one piece when you nudge the pan and an instant-read thermometer in the center reads 160°F (71°C), about 12 to 18 minutes.
Take out and rest
For each batch
Take the skillet out with oven mitts and lay a mitt over the hot handle. Rest the frittata until it firms and settles slightly, about 5 minutes, then loosen the edge and underneath with the spatula and slide it onto the cutting board.
Top and serve
For the whole recipe
Top with the parsley and cut 8 wedges. Divide into 4 servings, 2 wedges each, hot or warm. The frittata is cut and portioned.

Make ahead: Cook, cool within 2 hours, refrigerate; serve cold, room temperature or reheated.
Leftovers: To 165°F (74°C).
Food safety
- Gruyère AOP is raw-milk; for pregnancy FoodSafety.gov allows raw-milk cheese only when heated to 165°F or steaming hot. The finished frittata reaches 160°F at the center; use a pasteurized cheese (most US cheddar) to avoid the question.
Nutrition notes
High in saturated fat: about 42% DV per serving. FDA's guide treats 20% DV or more as high.
Calcium: about 25% DV per serving (20% DV or more is 'high' on FDA's %DV guide; a meal claim must name the food supplying it).
Vitamin C: about 56% DV per serving (20% DV or more is 'high' on FDA's %DV guide; a meal claim must name the food supplying it).
Vitamin A: about 41% DV per serving (20% DV or more is 'high' on FDA's %DV guide; a meal claim must name the food supplying it).
Vitamin K: about 29% DV per serving (20% DV or more is 'high' on FDA's %DV guide; a meal claim must name the food supplying it).
Protein: about 42% DV per serving (20% DV or more is 'high' on FDA's %DV guide; a meal claim must name the food supplying it).
Potassium: about 10% DV per serving (10–19% DV range).
Sodium before added salt is about 142.2 mg per 100 g of dish; FDA's 'low sodium' main-dish criterion is 140 mg or less per 100 g, so the dish does not meet that bar before salting.
