Batching
For 2 to 8 servings, use equal batches of no more than 4 servings in the large, deep skillet about 12 inches (30 cm) across. Leave enough empty space above the beans to fold in a handful of spinach and stir without spilling; split the batch further if needed. For 2 servings, use the same large skillet; the sauce thickens faster in a thin layer, so check it a minute early and add a splash of water if it catches. Finish each batch with its spinach and lemon. Serve sequential batches as they finish, or use separate skillets at the same time and combine before serving. Sequential batches add elapsed cooking time; keep the burner heat and the doneness cues the same. Toast the bread in rounds as needed. Use one halved garlic clove per batch for the toast; thinly slice the other whole cloves for the pan.
Original recipe: 4 servings.
Pepper flakes and Parmesan are optional. Keep them separate if serving people who prefer to omit them.
Ingredient substitutionsBefore you start
- Read through the steps and prepare the ingredients before heating the pan. Set aside 2 tbsp olive oil for the beans and 1 tbsp for toast; thinly slice 3 cloves garlic for the beans and peel and halve 1 clove for toast. For more than one batch, divide each prepared ingredient into equal shares.
Directions

Read and get ready
For the whole recipe
Read through the recipe and gather the equipment. Use the ingredient lines to divide the oil and garlic. Rinse the beans in the colander under cold water and leave them to drain. Finely chop the onion. Thinly slice 3 cloves garlic; peel and halve 1 clove garlic for the toast. Juice half of the lemon (half of each lemon if you have two) and cut the other half into wedges. Check before heating: Beans draining, onion chopped, garlic sliced and halved, and lemon juiced and wedged.

Soften the onion
For each skillet batch
Heat 2 tbsp olive oil in a large, deep skillet or wide pot, about 12 inches (30 cm) across, over medium heat until the oil shimmers. Add the onion and a pinch of salt from the measured total. Stir occasionally until the onion is soft with lightly golden edges, about 8 minutes.

Cook the garlic and tomato paste
For each skillet batch
Add 3 cloves garlic, the tomato paste, oregano and optional pepper flakes. Stir over medium heat until the paste is brick red and the garlic smells sweet, about 1 minute. If the garlic starts to color before the paste darkens, add the tomatoes at once.

Simmer the beans
For each skillet batch
Add the tomatoes with their juice, drained and rinsed beans, water or vegetable stock and the remaining salt. Stir and bring to a simmer, then lower the heat to a gentle simmer. Leave the pan uncovered and stir now and then. Partway through, mash a spoonful of beans against the pan and stir it back in. Cook until the sauce coats the beans and a spoon drawn through it leaves a brief path, about 10 minutes.
Choose a suitable batch size

Make the garlic toast
For each skillet batch
Meanwhile, toast the bread until the toast is crisp and deep golden with a rough surface. Use a toaster or a dry second skillet over medium heat; turn the skillet slices once. While hot, rub one side of each slice with the cut face of 1 clove garlic, halved, then drizzle the slices with 1 tbsp olive oil.

Wilt the spinach and taste
For each skillet batch
Stir in the spinach a big handful at a time over low heat, letting each handful wilt before adding the next. When the spinach is wilted and glossy, remove the pan from the heat and add the juice from half the lemon allocated to this batch. Taste a small spoonful. Aim for a savory flavor with a bright lemon finish. If it tastes flat, add salt to taste in small amounts. If it tastes heavy, squeeze in a little more lemon from a wedge. Add black pepper to taste.

Serve
For the whole recipe
Divide the beans into 4 servings. Sprinkle over the Parmesan, if using, and serve hot with the garlic toast and the remaining lemon wedges. The beans are portioned with the toast alongside.
Substitutions
Canned great northern beans can replace the cannellini in the same package size and count. This swap changes the beans; it does not establish identical nutrition.
cannellini or other white beansuseGreat northern beans
2 cans · For the whole recipe
What changes: A mild white-bean alternative; check tenderness and sauce coating as you simmer.
Steps it affects · For each skillet batch
- Use 2 cans great northern beans, each in the same 15-ounce package size as the cannellini. Rinse and drain, then simmer to the same sauce-coating cue. Check the beans rather than assuming identical cooking time.

Why it works
Associated with
Italian (Tuscan) bean-and-toast cooking, as inspiration, contemporary US weeknight home cooking
Pellegrino Artusi's 1891 cookbook called the related dish 'fagioli a guisa d'uccellini', cooking boiled beans in oil and sage with tomato sauce; fettunta is Tuscan bread toasted, rubbed with garlic and oiled, historically a way to use stale bread.
