Potato pancakes

Yield
4 servings

Crisp, lacy edges and a tender middle, from little more than potatoes, onion and a hot pan. They're the classic Hanukkah latke and an everyday side across Central and Eastern Europe. They teach you how to get water out of grated vegetables, keep the starch that comes with it, and shallow-fry at a steady heat.

Batching

Shred and mix one base batch at a time, since the shreds darken as they wait. Fry 4 or 5 pancakes per batch in the 12-inch skillet without crowding; frying time per pancake does not change with the quantity.

Original recipe: 4 servings.

Sour cream, unsweetened applesauce and chives are included in the base nutrition scenario. Extra salt is excluded. Nutrition is incomplete because the amount of frying oil the pancakes absorb is not established.

Before you start

  • Read through the recipe before shredding. Gather the grater, towel, bowls, skillet, rack, thermometer and measured ingredients.

Directions

Skin-on potatoes, eggs and measured ingredients sit beside bowls, a grater and a prepared draining rack.
1

Read and gather

For the whole recipe

Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything. Set the wire rack on the baking sheet and lay the towel beside the medium bowl. Everything is measured and the rack is ready before you shred the potatoes.

Evenly beaten eggs with pepper flecks fill a stainless bowl, with a fork resting inside.
2

Beat the egg mixture

For each batch of shreds

Beat the eggs, 3/4 tsp fine salt and the black pepper with a fork in the large bowl. The eggs are evenly beaten with no streaks of white.

Pale potato and onion shreds with brown skin flecks fill a glass bowl beside a grater.
3

Shred the potatoes and onion together

For each batch of shreds

Shred the potatoes and onion into the medium bowl on the large holes of the box grater or with the food processor shredding disk. Alternate a potato with a chunk of onion and toss as you go so the onion juice coats the potato. The potato and onion shreds are evenly mixed.

Dry shreds sit over beaten eggs while pale starch settles beneath squeezed liquid in a separate bowl.
4

Twist the shreds dry and save the starch

For each batch of shreds

Twist the shreds hard in the towel over the medium bowl until they barely drip, then move the dry shreds into the egg bowl. Let the squeezed liquid stand until a pale, chalky layer of starch settles on the bottom, about 3 to 5 minutes.

Damp potato shreds clump on a fork in a mixing bowl, with starch residue in a smaller bowl.
5

Toss in the flour and starch

For each batch of shreds

Toss about 1/3 cup all-purpose flour into the shreds and eggs with a fork until coated. Pour the liquid slowly off the settled starch, then mix all of the starch into the shreds. Stop when you have shaggy, damp shreds that clump when squeezed, not a wet batter.

A potato shred bubbles in shallow skillet oil while a thermometer reads 350°F.
6

Pour and heat the oil

For each batch of shreds

Pour about 1 1/2 cups canola oil into a 12-inch skillet, enough to reach about 1/4 inch (6 mm) deep. Heat it over medium-high heat until it shimmers and a dropped shred sizzles hard right away, about 350°F (175°C) on an instant-read thermometer.

A small golden pancake drains on a rack with a cut bite and a thermometer reading 160°F.
7

Fry a test pancake, then taste and adjust

For each batch of shreds

Fry a test pancake: drop about 1/4 cup of the mixture into the oil and flatten it to about 1/2 inch (1 cm) thick. Fry over medium-high heat, flipping once, until deep golden brown with crisp edges, about 3 to 4 minutes per side. The center should reach 160°F (71°C) on an instant-read thermometer. Drain it on the wire rack, then taste it. Aim for a well-salted pancake, crisp outside and tender inside with no raw crunch. If it tastes flat, stir fine salt to taste into the mixture.

Four lacy potato pancakes fry spaced apart in a skillet while finished pancakes drain on a rack.
8

Stir the mixture and fry in batches

For each batch of shreds

Stir the mixture, then fry 4 or 5 pancakes at a time, spaced apart, over medium-high heat until deep golden with crisp, lacy edges, about 3 to 4 minutes per side. Move them to the wire rack in one layer and sprinkle them with fine salt to taste while hot. Between batches, add oil from the reserved about 1/2 cup canola oil to keep it about 1/4 inch (6 mm) deep, lift out stray burnt shreds with the slotted spoon, and wait until a shred sizzles hard again.

Four plates hold crisp potato pancakes with chives, beside separate bowls of sour cream and applesauce.
9

Divide and serve

For the whole recipe

Divide the pancakes into 4 servings as soon as the final batch is done. Serve the sour cream and applesauce on the side and sprinkle the chives over the top. To reheat leftovers, crisp them on a rack in a hot oven until they sizzle and reach 165°F (74°C) on an instant-read thermometer. The pancakes are portioned with their toppings.

Why it works

Associated with

Ashkenazi Jewish, German, Polish, Belarusian, Ukrainian, Czech, Swedish, Irish

Fried pancakes for Hanukkah predate potatoes: earlier latkes were made with cheese (recalling Yehudit) and other ingredients. Potatoes reached Europe in the 1500s, so potato latkes are at most about 400 years old; they spread among Ashkenazi Jews in Eastern Europe, especially after mid-1800s crop failures led to mass potato planting in Poland and Ukraine, and because cheese latkes could not be fried in the chicken fat poor households used.

Skill level

Some practice

Hot-oil shallow frying raises it above 'easy' (directional).

You'll practice: grating, wringing water from shreds, saving potato starch, shallow-frying at ~350°F (175°C), batch frying and oil management

Allergens

Contains: egg

Diets

Vegetarian: Fits as listed Vegan: Doesn't fit as written

Occasions

Hanukkah (Chanukah), Passover, Everyday side (Central/Eastern Europe)

Course: side-dish · Technique: shallow-fry · Time: 30-to-60-minutes

Serving and keeping

Make ahead: fry ahead and recrisp in a hot oven

Leftovers: to 165°F (74°C), on a rack in a hot oven to recrisp

Food safety

  • deep golden both sides; mixture contains raw egg, so cook through (egg dishes to 160°F)
  • about 350°F (175°C); if oil smokes, pull off heat (recipe step 5)
  • peanut oil option is a peanut-allergen risk unless highly refined (US exemption only)
  • cut away green skin

Nutrition notes

Russet potatoes supply potassium (417 mg per 100 g raw); shallow frying adds substantial fat.
