Batching

Make one batch at a time: 6 slices of bacon fill the 10- to 12-inch skillet in one layer. For 8 servings, render a second batch of bacon and dress a second bowl. Cooking and chilling times do not multiply with the ingredient amounts.

Original recipe: 4 servings.

The to-taste salt and cider vinegar are left out of the base nutrition scenario. The bacon fat is poured off and not eaten.

Before you start

  • Read through the recipe before you start. Gather the skillet, slotted spoon, tongs, lined plate, second plate, heatproof container for the fat, bowls, whisk, knife, peeler and the measured ingredients.

Directions

Cut broccoli, bacon and measured salad ingredients with a paper-towel-lined draining plate ready.
1

Read and gather

For the whole recipe

Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything, and line a plate with paper towels so the bacon has a place to drain. Everything is cut and measured, and the plate is lined.

Crisp deep-brown bacon pieces lifted from rendered fat onto paper towels.
2

Spread the bacon in the cold skillet and render it

For each batch of salad

Spread 6 slices bacon in one layer in the cold 10- to 12-inch skillet, then set it over medium heat. Cook, stirring now and then, until the pieces are deep brown and crisp and the bubbling quiets, about 10 to 12 minutes. Lift the bacon onto the paper towels with the slotted spoon.

Broccoli, stem dice, red onion, cranberries and shredded cheddar evenly coated with creamy dressing.
3

Whisk the dressing and fold it into the broccoli

For each batch of salad

Whisk about 1/2 cup mayonnaise, 2 tbsp cider vinegar, 1 tbsp sugar, 1/8 tsp fine salt and 1/4 tsp black pepper in the small bowl until smooth and the sugar dissolves. Put the broccoli, red onion, about 1/3 cup dried cranberries and about 1/2 cup sharp cheddar in the large bowl, pour in the dressing and fold, turning from the bottom, until every floret is coated. Cover the bowl and refrigerate it.

Hulled sunflower seeds lightly toasted in the wiped skillet with bacon fat reserved separately.
4

Pour off the fat and toast the sunflower seeds

For each batch of salad

Pour the bacon fat from the skillet into the heatproof container, not down the sink, and wipe the skillet out with a wad of paper towel held in the tongs. Toast about 1/3 cup hulled sunflower seeds in the skillet over medium heat, stirring, until they smell nutty and a few turn light golden, about 3 minutes. Move them to the second plate to cool.

Covered dressed broccoli salad with bacon and toasted sunflower seeds held separately.
5

Refrigerate the dressed broccoli

For each batch of salad

Refrigerate the dressed broccoli until it is cold and the florets lose their raw squeak, about 30 minutes. You can hold it for up to a day, keeping the bacon and seeds separate; refrigerate the bacon, covered, if it will sit out longer than two hours.

A forkful of dressed broccoli, cranberry and cheddar ready to taste, with salt and vinegar nearby.
6

Stir and taste the salad

For each batch of salad

Stir the salad and taste a forkful with a floret, a cranberry and some cheese. Aim for creamy, sweet and tangy in balance, with broccoli that tastes dressed rather than plain. If it tastes flat, add fine salt to taste. If it tastes too sweet, add cider vinegar to taste. The salad tastes balanced and well dressed.

Four portions of broccoli salad with crisp bacon and toasted sunflower seeds added just before serving.
7

Fold in the bacon and seeds and serve

For the whole recipe

Fold in the bacon and most of the sunflower seeds right before serving, sprinkle the other seeds over the top, and divide the salad among plates to make 4 servings. Keep it cold, and return it to the refrigerator within two hours of setting it out, or within one hour when it is above 90°F (32°C). The salad is crunchy and ready to serve.

About this recipe

Research preview: these details come from our sourced research and haven't been reviewed by our chef yet.

Why it works

Chilling the dressed broccoli for about half an hour softens its raw edge, rendering the bacon from a cold pan makes it evenly crisp, and folding in the bacon and seeds just before serving keeps them crunchy.

Associated with

American (Midwestern) home cooking

Raw broccoli with bacon, dried fruit and sunflower seeds in a sweet mayonnaise-vinegar dressing is a Midwestern picnic and potluck salad. The earliest dated printing found is a Minnesota grocer's cookbook from 1985; no scholarly history was found.

Serving and keeping

Best served: Cold, right after folding in the bacon and seeds With the remaining sunflower seeds sprinkled on top

Make ahead: Fold in the bacon and seeds right before serving so they stay crisp; refrigerate the bacon, covered, if it will sit out longer than 2 hours.

Storage: Refrigerate covered at 40 °F (4 °C) or below. No federal chart lists broccoli salad; this follows the federal row for mayonnaise-dressed salads. It does not freeze well.

Leftovers: Keep covered in the refrigerator and return it there within 2 hours of setting it out, or 1 hour above 90 °F (32 °C). The bacon and seeds soften once dressed.

Food safety

  • Pour the hot bacon fat into a heatproof container, not down the sink.
  • Refrigerate the cooked bacon, covered, if it will sit out longer than 2 hours.
  • Keep the salad cold and return it to the refrigerator within 2 hours of setting it out, or within 1 hour above 90 °F (32 °C).

We make no statement about cross-contact in your kitchen or in packaged ingredients. Check the mayonnaise, cheese and sunflower kernel labels.
