Potato leek soup

Yield
4 servings

A few inexpensive ingredients, a little patience with the leeks, and a soup that tastes far richer than it is. It teaches you to clean leeks properly, sweat them to silky sweetness without color, and blend potatoes so they turn creamy instead of gluey.

Batching

Cook one batch in each 5- to 6-quart pot. For 8 servings, cook a second batch in its own pot. The cues stay the same; cooking time does not multiply with the ingredient amounts.

Original recipe: 4 servings.

The optional bay leaf, thyme sprigs and lemon juice, the extra salt, the cream drizzle and the black pepper are left out of the base nutrition scenario. The selected liquid is low-sodium chicken broth.

Before you start

  • Read through the recipe before the pot goes on the heat. Gather the pot, the bowl and colander for the leeks, the blender, spoon, ladle and the measured ingredients.

Directions

1

Read and gather

For the whole recipe

Read through the recipe and gather the equipment. Use the ingredient lines to prepare and measure everything. Wash the sliced leeks by swishing them in the large bowl of cold water, waiting for the grit to sink, then lifting them out into the colander; pouring the bowl would dump the grit back on them. Everything is measured, and the leeks are clean and still damp.

2

Melt the butter and sweat the leeks

For each pot of soup

Melt 4 tbsp unsalted butter in the 5- to 6-quart heavy pot with a lid over medium-low heat. Add the damp leeks and 1/2 tsp fine salt, cover the pot, and cook, stirring every few minutes, until the leeks are silky and soft with no browning, about 12 to 15 minutes.

3

Stir in the garlic and simmer the potatoes

For each pot of soup

Stir in the garlic until it smells fragrant. Add the potatoes, about 4 cups low-sodium chicken broth, the bay leaf and thyme sprigs if you are using them, and 1/4 tsp fine salt. Bring to a boil over high heat, then turn to medium-low heat and simmer with the lid ajar until a potato chunk falls apart when you press it with a spoon, about 20 minutes.

4

Take the pot off the heat and blend the soup

For each pot of soup

Take the pot off the heat and lift out the bay leaf and thyme stems if you used them. Blend with the immersion blender in short bursts, moving it around the pot, until the soup is mostly smooth, about 30 to 60 seconds. With a countertop blender, fill the jar no more than half full, remove the center cap, cover the opening with a folded towel, blend each batch only until smooth, and collect it in the heatproof bowl before pouring it all back into the pot.

5

Stir in the cream over low heat

For each pot of soup

Stir about 1/2 cup heavy cream into the soup over low heat. Warm it until the soup steams without boiling. If it is thicker than you like, stir in hot water a splash at a time until it pours off the ladle thick and smooth.

6

Taste and adjust the seasoning

For each pot of soup

Taste a spoonful. Aim for mellow and savory, mildly sweet from the leeks and creamy. If it tastes flat, add fine salt to taste, stirring and tasting between additions. If it still tastes dull, stir in 1–2 tsp fresh lemon juice, if using. Finish with black pepper to taste. The soup tastes mellow and well seasoned.

7

Ladle and serve

For the whole recipe

Ladle the soup into warm bowls to make 4 servings. Top each bowl with a drizzle of heavy cream to taste and the chives. Refrigerate leftovers within two hours. The soup thickens as it sits, so add a splash of water as you reheat it over low heat, stirring, until the center reads 165°F (74°C) on an instant-read thermometer. The soup is portioned and topped.

About this recipe

Research preview: these details come from our sourced research and haven't been reviewed by our chef yet.

Why it works

Sweating the leeks slowly in butter under a lid makes them silky and sweet without browning, simmering the potatoes until they fall apart gives the soup its body, and a little cream added below a boil keeps it smooth.

Associated with

French home cooking

Leek and potato soup is the French home soup known as potage Parmentier or soupe à la bonne femme. Leek soups are recorded across Europe, and a chilled, cream-finished version became famous in New York in the early 20th century as vichyssoise.

Course: soup-course, main-dish · Technique: sweat, simmer, blend · Time: 30-to-60-minutes, make-ahead, freezer-friendly

Serving and keeping

Best served: Right after the final seasoning In warm bowls with a drizzle of cream, chopped chives and a grind of pepper

Make ahead: It thickens as it stands, so stir in a splash of water when you reheat it.

Storage: Refrigerate within 2 hours (1 hour above 90 °F), divided into shallow containers so it cools quickly. Freeze for longer keeping; frozen soup stays safe, and federal charts suggest using it within 2 to 3 months for best quality.

Leftovers: Keep 3 to 4 days in the fridge. Thin with a splash of water, reheat gently, stirring, to 165 °F (74 °C) and taste for salt again.

Food safety

  • Blend off the heat. In a countertop blender, fill it only half full, remove the center cap and cover the opening with a folded towel.
  • If you used them, lift out the bay leaf and thyme stems before blending; the bay leaf stays stiff and is not eaten.
  • Swish the sliced leeks in cold water and lift them out, so grit and soil stay behind.
  • Scrub the potatoes well, since the skins stay on.
  • Refrigerate leftovers within 2 hours, in shallow containers.

We make no statement about cross-contact in your kitchen or in packaged ingredients. Check the chicken broth label.

Nutrition notes

Potatoes supply most of the carbohydrate and fiber.

Butter and cream supply most of the saturated fat; leaving out the cream lightens the soup.

Low-sodium broth or water and salting to taste keep the sodium modest.

We don't show nutrition claims (like “good source of”) until our legal review is done.

Swap notes

  • low-sodium chicken broth · vegetarian

    Works with changes

    Use: vegetable broth or water

What changes: Use the same amount; the recipe row already allows either.; Vegetable broth often contains celery; check the label.; The same change suits Hindu vegetarian, Sikh vegetarian and kosher dairy kitchens.

Not a swap: A researched proposal: this page's ingredient list, allergens and nutrition still describe the recipe as written.

  • unsalted butter · vegan

    Works with changes

    Use: olive oil

What changes: Sweat the leeks in a little less olive oil than the butter; the soup tastes fruitier and lighter.; Use vegetable broth or water too.

Not a swap: A researched proposal: this page's ingredient list, allergens and nutrition still describe the recipe as written.

  • heavy cream · vegan

    Works with changes

What changes: Leave out the cream, or stir in a plant cream off the heat; the soup is lighter and more leek-and-potato.

Not a swap: A researched proposal: this page's ingredient list, allergens and nutrition still describe the recipe as written.

  • unsalted butter

    Works with changes

    Use: a splash of water

What changes: On strict days, sweat the leeks covered with a little water and a pinch of salt instead of butter, and leave out the cream.; Use vegetable broth or water.

Not a swap: A researched proposal: this page's ingredient list, allergens and nutrition still describe the recipe as written.

  • medium leeks

    Works with changes

Use: green leek leaves only, washed and sliced

What changes: Use only a small amount of the green tops; the soup tastes greener and less sweet, close to a different soup.; Use garlic-infused oil instead of garlic, lactose-free cream or none, and a low-FODMAP broth.

Not a swap: A researched proposal: this page's ingredient list, allergens and nutrition still describe the recipe as written.

  • Yukon Gold potatoes · jain

    Not recommended

Not a swap: No supported swap: potatoes and garlic are root or bulb vegetables, and potatoes are the body of the soup.
